Cooks Note: Most all of the vegetables can be substituted in these recipes. For example, any summer squash variety will work even if the particular recipes calls for zucchini etc.

Also, fresh tomatoes may be used in recipes that call for canned.

  • One 28-ounce can of tomatoes equals about 2 pounds
  • One 14-1/2-ounce can of tomatoes equals about 1 pound
